The Cookie Jar

Who the heck has a cookie jar? I thought these were out? Maybe that's just because my mom never had one?!

Well I'm on vacation and my grandma was sure to make cookies to go in the dang jar. 

I was all like oh I won't eat them. They have gluten and milk. 

Fail. Every time I walk past that jar I stick my stupid frickin' hand in and grab one! Blah. Vacations. 

On the bright side they have an orange tree with delicious, fresh, organic oranges. Score.

Mexican Turkey Burger

I like to keep things simple. AKA why this blog is called Simple. Fit. Fun.

But I also need to eat and I have realized if I want to eat healthy I need to make my own food.

Usually I rotate through the same 4 meals: broccoli slaw spaghetti, spaghetti squash, tuna wraps or the amazing egg overload (3 eggs + 2 T egg whites + a shiz ton of veggies).

But then I find this spark in me to try something new. And this weekend I tried ‘Mexican Turkey Burgers’

Ok honestly, a turkey burger that I made Mexican with the fixings.

How I made it:

  • 12 oz turkey burger meat
  • 1 onion, I used white
  • Then a shake of salt, pepper. Onion powder, garlic salt, chili powder 



Mix all ingredients together and then form into THREE large patties. Cook on grill.

If you want to make it Mexican like I did you will need:
  • Guacamole
  • Salsa
  • Grilled peppers
  • Black beans

This recipe is totally made up. I had no idea how to make a turkey burger so I just threw some seasonings together – and it turned out Delicious!

Now for some not so exciting news..

Tomorrow (Friday) was supposed to be more long run (TWELVE MILES). But I have a double ear infection, sore throat and sinus infection, fun stuff, huh?

So I decided tonight I will not be running this. I am going to try to my hardest to kick this sickness out of me by 4:00 AM Saturday when I board my plane to California.

In California I hope to get in a few shorter runs. If I feel like I can do a 10, 11, or 12 mile run I am going to do it. But thankfully I jumped ahead in the training so missing this week won’t kill me.

When I am in California I will try to send some posts from my phone but honestly who knows if I will be able to figure it out ;)

W.O.W. {#16} + My Fav Protein Shake

“Tabata” is the name of a particular type of workout program that provides similar health benefits to that of cardio workouts, but Tabata has a bit more spice. Instead of hours upon hours or exercise, Tabata can be completed in 4 minutes. Tabata falls under the category of high intensity training or high intensity interval training. Today I write to explain to you the history of Tabata and exactly what it is.

So can you geuss what the workout will be this week?

Hello TABATA!

Love/ hate relationship. Lets get right to the exercising and quit the complaining:

Burpees/squat mix for 4 minutes (Do ONE burpee, come up, do ONE squat, do ONE burpee, etc. for 45 seconds, then hold a squat for 15 seconds, then do the combo for 45 more seconds, you feel me?)
Mountain climbers for 4 minutes (stop every 45 seconds for a SHORT childs pose, then get right back into climbing!)
Skaters for 4 minutes (stop every 45 seconds to hold for 15 seconds in low position)
Shuffle/ in place running mix for 4 minutes (for ONE minute do a shuffle, ONE minute run in place, etc. NO BREAKS)
Squat jump/ jumping jack mix for 4 minutes (30 seconds squat jump, 30 second jumping jack, 30 second squat jump, etc.)

In between each sets get some water and rest for ONE minute (or however long you need!)

This is a fun one!




For the first time in awhile the scale is moving in the right direction!! TOP DOG AT BOOT CAMP. Aka- I lost the most weight… It made my day getting this weekly email (this was for LAST week however we weighed in today too and lost .5! Little but something to be proud of)

And of course - you always need to get some protein in post workout! This is my favorite!!! Literally this is what gets me through my workout knowing I get a protein shake Sad life!

2 T. PB for more calories or PB2 if you are looking to reduce calories
1 T. cocoa powder
your favorite protein powder - I use Isagenix.
1 piece of your favorite chocolate! Mine is Isagenix (it's even healthy ;))!

My Time To Complain

My long run this past weekend was no doubt my hardest yet. Throughout the week on my runs I have had knee pain and shin splints. No fun!

Not to mention the other things that seem to be going wrong:
Heart rate monitor = broken
Lost my headphones = I will not run until I get the same pair
I’m sick of the songs I’ve been running to = running is harder
My feet are destroyed! Well actually my toes. I am so embarrassed to be in flip flops next week on vacation!

The race is SO SOON. This stuff cannot all be crashing down on me. So how am I solving these problems?

No waiting I got to the store and bought the same headphones that I irresponsibly lost.

Same pair just in green instead of pink! Gotta match for that race :) HEADPHONES 

I ordered the HR monitor that Catherine speaks so highly of. I may or may not be waiting impatiently by the door for the UPS guy to get to my house in the next few days. I AM SO EXCITED. I’ve wanted this for awhile, but I said I needed to either sign up for a marathon or lose some more LBS. But then mine broke and working out without a HR monitor just isn’t as fun. Here’s the one I ordered. 

Still working on songs. Looking things up on Google and Pinterest on the hour to see if things change. When I am bored I look up song titles… So if  you have a good workout jam throw it my way! PLEASE.

I am getting a pedicure later this week. I am hoping they can give my feet some TLC.

Chocolate Cake. Sanity. Runs.

This cake has been staring me in the eyes since FRIDAY night. Every time I open the fridge I think I drool a little more. I have not yet had a bite. But it does look delicious!!!


This week is about to test my sanity.

I am working lots and have class, but on top of that I go on vacation next week (YAY) and need to prepare to miss a full week of the real world.

I have a few goals this week:
  • Workouts

  1. Monday: Cycle/ legs
  2. Tuesday: Boot camp
  3. Wednesday: Boot camp & a 4 mile run
  4. Thursday: Boot camp
  5. Friday: LONG RUN. 12 miler.

  • Drink LOTS of water. If I feel like eating when I know I am not hungry, try taking a deep breath and drink 8 oz water.
  • Lights out by 9:00 PM. (Ok you can judge, but remember I wake up at 4:45..)
  • Pack for vacation… This will obviously happen, I just need to be smart about what I pack!
  • Spend 2 minutes when I wake up and 2 minutes before bed deep breathing
  • Reflect on all the things I am thankful for, for 5 minutes each day


Usually I would have something along the lines of eat my fruits and veggies. But I am proud to report that I have been nailing my 8-10 servings of veggies and my 2 servings of fruit daily! BOOM.

Now lets talk about this past weekend/Sunday! I woke up and ran ELEVEN (11) miles! On the treadmill. This was my hardest run, but if you feel like I say that every week, it’s probably true because they just keep getting longer :)

I learned that my treadmill starts over at 100 minutes. Ugh. That’s the stuff that I just get frustrated at while running. I was in pain. I was doubting myself the whole run. But I finished.


Then I got to meet up with Catherine and Katie! We did some shopping and OH MY were the deals awesome at the Albertville Outlets. It’s always awesome to catch up with these ladies! They hold me accountable and make me want to achieve my goals!
