It is Happening!


You know what makes me excited these days? LinkedIn. Oh.My.Gosh. I am officially becoming an adult. Ha ha! I literally find so much joy connecting with people, looking at jobs and different organizations, and creeping peoples profiles.
What else makes my heart dance? Job interviews, there is this holy crap this is happening feeling going on but then I have a feeling like YES, I am about to make money instead of spend billions of dollars on school.



What makes me absolutely cringe when it comes to the adulating world? Cars. On Monday one minor problem turned into a major problem that has made my week be totally blah. I cannot drive my car and I have been sharing a car with my sister. This makes me appreciate having a car! Hopefully they can order all of the part and get my car in Friday, because this car sharing stuff cannot go on forever.

Monday I was all ready to restart my engine after my weekend “off”. But, I will admit I feel like a can of biscuits about to pop from all the junk I have been eating. I thought stress would go away after my marathon and mid-term week at school but this week has been very overwhelming (I did SO well with my eating until this weekend, but one bad choice lead to fifteen bad choices).  I have been exercising still but my eating has not been great since the weekend, which I really want to change because I will eventually have to wear jeans and if they do not zip that will be sad. Ha ha.


Oh well, tomorrow is a new day of connecting with people on LinkedIn, going to boot camp and eating foods that do not make me burst!

Food Baby

This weekend Kyle and I celebrated our one year anniversary. Friday night spent down by the MOA and we had dinner, went shopping, and got frozen yogurt. Since the marathon I have done pretty well with hitting my macros daily and I have been putting in work at the gym (minus last weekend I had some pizza and drinks). It was great to have a nice dinner and dessert without thinking twice about what a macro means.



Kyle put fruit on his froyo - I gave him some serious crap hahaha. 

Saturday we did homework, worked on our resumes, made healthy Apple crisp (I'll share recipe soon!) and then got ready for a night at the Gopher Game. We met up with Katie and Evan for drinks/apps before the game, which is always a good time!
Today I'm seriously feeling like I have a food baby! I didn't care what I ate all weekend and today I am feeling sluggish. But I'm so glad I got to have a fun weekend and tomorrow is a new day where I plan to give 110%!

TGIF!

I have been going a little crazy lately with being so busy and eating more meals in my car than I would like to admit… BUT food is important for my body and I am going to continue looking lilke a ding dong shoving a salad in my face in the Target parking lot.

I wanted to eat the whole processed food section at Target yesterday but instead I settled for a salad. It was actually the bomb. I forgot my meal at home and only had my homemade wrap to get me through five hours. That was not going to be enough! Ha ha. I was proud of my decision because after a week of Midterms I was so over eating vegetables. I am human, I think it is OK to admit that I like a warm bowl of mac n’ cheese from Panera!  Each good decision I make I feel like I am getting stronger and stronger.

Tonight I am going out with Kyle for our one year and we have had a froyo date planned for weeks. Oh and a dinner, but froyo is more important ;)

Anyway…. I wanted to share this super simple yummy appetizer you could bring to any party!  I have no idea what to call these little buggers, so I will just call them an Italian Appetizer! (Full of protein).  

What you need:
Black olives
Cherry Tomatoes
Turkey pepperoni (or regular)
String cheese
Italian dressing
Tooth picks

The amount of ingredients will depend on how many you want to make. But you simply dry the olives so they are not wet. Then cut the string cheese into four pieces. Next you place one cut up string cheese in the middle, one slice of turkey pepperoni on one side and on the other side place one black olive OR one cherry tomato. For the whole amount I made, I poured 1.5 T of dressing over the plate right before serving.


I would for sure make these again! I thought they were super yummy and it is nice to have a healthy snack at a party that is high in protein.

Every morning I spend about 5 minutes scrolling through social media looking at funny stuff, it gets me in a good mood with positive vibes for the day. Mid-terms will be over Friday and I have one interview then I have a super fun weekend planned. I CANNOT WAIT!

Well….

My current feels:


For the past week I have wanted to write a blog post but every time I plan to write a post, something comes up! I have been crazy busy and I am starting to feel very overwhelmed with classes.

Although I look like I am dying, at least my bicep is having a good time :)

My classes are no longer ‘easy’ because I am past the first few weeks that are always smooth sailing. Midterms are next week and then I have a day off. Praise The Lord!

Because I am graduating in May I have been starting to search for jobs. STRESSFUL. I have no idea what I truly want to do but I have an interview next week at a company, although I do not even know where I will be next year around this time! It is great experience though and I want to know what jobs are out there/pay/benefits/etc. so a few extra interviews are important!

Kyle was home for the weekend and we hit up the Apple Orchard.
We paid $7 to go through a corn maze and get an apple with all
the little kids. Worth it.
Also, Trumi started at a local school so I have been working another day, which does not seem like much but it is a lot of planning outside that hour to make sure everything goes smoothly. I am not training alone so each week I have to be in contact with my CIT (coach in training) plus in contact with the school. Busy!!!!

Someone contacted me today and wants to do 1:1 training with me, which is a super neat opportunity! I would be helping her and her daughters train for a 5K in November.

Someday when I die, I imagine this is what the food they serve in

a secret chunky applesauce glaze. 
Then my own personal stuff like trying not to eat ALLLLL the apple and pumpkin desserts  ;) Also, working out! I have been in a good routine of going to boot camp but I also have a personal goal for a 10K on Thanksgiving Day, so I am trying to keep running too.

He is lucky I was feeling nice and only signed us up for a 10K. Ha ha! 
Every night when it is time to go to bed I hit the pillow and I am asleep instantly, just to wake up at 4:52 am to start my day all over again! I have so much to be thankful for so I am trying to remember that instead of being stressed/overwhelmed/tired. If I can run a marathon, I can get through the next few stressful months of life!
