Weekend Recap - Country Jammin'

Tired – check

Ready for my own bed – check
Best weekend of my summer? CHECK


This weekend I went to Country Jam with Catherine and Kenz. It was so much fun! But I will say that we tried not to mention the C words: carbs or calories. I did food log Sunday everything I could remember eating Saturday. Throughout the weekend I was not concerned about what I was eating, but I still wanted to see what it looks like! WOW. Normal day vs. vacation day! HOLY CARBS.

 
























The good thing is I do not eat like this every day. I got home Sunday and started planning my workouts for the week and my meals. I know that I need to get on track again!
 


It is funny because my trainer Sara (also happens to be my boss, so kind of embarrassing!) texted me and said she was not expecting to see all my drinks! She mentioned that I liked strawberry moonshines, seriously the drink of the weekend. Moonshine is not sold in MN so I already decided I will need to make a special trip to WI to buy some… So good!
 


I really need to buckle down and get some running in for my marathon in October – 13 weeks from yesterday. I am finalizing my training schedule as much as possible. I think I will do two short runs a week, one long run, one day of boot camp and a day of upper body mixed with cycling. Then rest the other days. I still want to see what Katie and Catherine are doing because we are going to try to run together.


I also may have or may not have been in bed by 6:30 last night, sleeping by 6:33 pm.

Being A Rabbit

How I got in 10 servings of vegetables yesterday!

I was a rabbit yesterday. ALL.DAY.LONG.

Here's what I ate:
Protein shake post workout {not pictured}
2 eggs, a bagel thin with 1 T cream cheese, peppers
Cucumbers, celery and peppers with banana bread
Spaghetti squash with broccoli, green beans and a turkey wrap with lettuce
Quest bar {not pictured}
Chicken dog {trader joes, my fav}, quinoa blend, asparagus and broccoli






Which is a grand total of TEN servings of vegetables. Adults are supposed to get 8-10. So I pretty much nailed it. Everyday isn’t this great, but incorportating a vegetable into you main dish helps. Some of my favorites are spaghetti squash, cauliflower pizza, spaghetti squash pizza, broccoli slaw spaghetti, cucumber boat sandwiches, bell pepper nachos.

Have you eaten your veggies today???? What vegetables do you HATE? LOVE?? I hate brussel sprouts. And LOVE cucumbers.

I Signed Up For A Fricken What?

Goals… Usually over all big goals are not attainable without the little goals, or the weekly goals. Every week I sit down and write {pen & paper, old school} my goals.

When I first started making goals I often had eat 7 servings of veggies, get sleep, eat fruit, drink ½ of my body weight in water oz., workout daily. Now my goals look a little different because I was able to get those goals under control. My goals this week are:
 

I actually did not have the best eating day yesterday… I started off great, then went to lunch and got a healthy meal, then a mini peanut butter cup pie blizzard {totally worth it}. Then I napped because I did not feel well. The plan was to run post nap. That plan turned into no run and having a donut. UGH. But today and tomorrow I am going to NAIL my goals.

This week I am going to an outdoor musical festival with Catherine and Kenz. It is 3 days of country music and some of the artists are Luke Bryan, Jake Owen, Dierks Bentley, The Band Perry, Chris Young and many more! I am pumped.

Yesterday I said something about a race. Well, I signed myself up for my first FULL MARATHON. Full fricken marathon, 26.2 miles, 5 hours of running, all the training, AHHH. I was explaining to Catherine and Katie (who I convinced to do it!!!) that the feelings I have are similar to when your crush talks to you. Super giddy and excited! Thinking about crossing the finish line, seeing my family, taking a picture to say I fricken did it, getting a medal (if I don’t get one I am getting one made), putting a bumper sticker on my car, so many exciting things! I will for sure talk about it a lot. Oh, by the way it is October 19th. Yippppie!!


I made a training schedule that I will follow as much as possible. I am planning some races between now and the full to be 100% prepared.
