Simple Yet Delicious


On Sunday I shared a ice cream recipe made with avocado’s and yesterday I shared a pizza recipe made with cauliflower. Today I am going to share another favorite new recipe of mine, which is asian peanut slaw. I got this recipe from my trainer/nutritionist.

It is one of those dump, stir and serve recipes - what could be better? This is a perfect quick side dish that could go along with any meal and would be super easy for a BBQ.


I got all of my ingredients from Trader Joe’s in Woodbury but I bet you could find similar ingredients at different stores. I just love Trader Joe’s so that's where I went. When you are going somewhere other Trader Joe’s make sure to look closely at what you are getting. Watch the calories and fat. But DON’T settle for 'fat free' or 'half the calories' or ‘sugar free’. That stuff is usually garbage and is almost always much worse for you. It has other things added to it to make it not good for your body. Try to go off the saying ‘if you can’t pronounce it don’t put it into your body’.

Anyway, back to the recipe, you need three things:

One bag of broccoli slaw
1/4 c. Trader Joes Thai peanut dressing
1 cup chopped nuts (I do peanuts. You could also do sunflower seeds, walnuts, pecans, etc.)

I just mix it all together in a big bowl and serve it. I find it is better the next day because the sauce has gone into the broccoli slaw more.

Cauliflower Pizza.... Yummy!


I really want to share another new favorite recipe with you; however, that would be two recipes in three days and I have another recipe I still want to share this week… So I have decided that this week is going to be about sharing three recipes in 5 days. Sunday I shared my new favorite dessert that made with chocolate chips and avocados. Yummy.  Later in the week I am going to share a side dish/ appetizer that you could bring to a summer BBQ.

Today I am going to share a gluten free pizza that is made with veggies. I recently tried to be gluten free but didn’t succeed, because lets be real food always wins. I am going to try again because I really want to commit and make it happen.

This pizza doesn’t even taste healthy and doesn’t taste like vegetables. Score!

Cauliflower Pizza Crust Recipe:
1 head of cauliflower, leaves and stem removed
1 tsp basil
1 tsp oregano
1 tsp parsley
1 tsp salt
1/2 cup Mozzarella Cheese
2 eggs
Preheat oven to 400 degrees.  Grate Cauliflower florets into rice like grains (or pulse a few times in a food processor-do NOT over chop)-it should resemble a fine grain like rice.  Pour cauliflower into a large bowl, add herbs, salt, cheese and eggs (beaten).  Use PARCHMENT PAPER on a baking dish or pizza stone to avoid crust sticking!  Place the cauliflower mixture (note-this won't resemble a ball of dough) on the middle of the stone and use your hands to press it into a circle about 1/4 inch thick.  Bake 30-40 minutes at 400 degrees.  Crust will be done when it turns golden brown in color.   Remove crust from oven.  Change oven temp to 450 degrees.  Add pizza sauce, cheese and any toppings you would like- bake about 5 minutes or until cheese is melted (can also broil if preferred)

I put sauce on the top of the pizza, some mozzarella cheese and Italian seasoning... So good! You could make a Hawaiian theme, sausage, vegetable pizza, any kind would work!

Funny story- I made the pizza and ran upstairs to do something. When I came back down ¼ of the pizza was gone, umm what the heck?? My dad really liked it I guess and then he made a comment like “sometimes you hear what is in food and it scares you. You don’t want to eat it because you psych yourself out. But that pizza is good!” Amen Troy Boy!!

This weekend I went golfing with my dad and forgot to share the pictures yesterday.



Golfing with him is fun. He is a pro and hits the ball to china and I just suck and can barley hit the ball 20 feet. So I have that going for me.



Then yesterday I let my dog out at 5:00 AM before I left for boot camp and she decided to roll in a dead animal. I was NOT happy; it was too early for this kind of nonsense. When I got home at 6:45 I had to give her a bath. She hates the bath and I think she felt bad for rolling in that animal (hence her ears : ))



Today I set my alarm to go running at 6:00 am; well unfortunately it rained last night. I was so sad this morning when I couldn’t go. NOT! I was psyched I got to sleep 1.5 hours longer.

Getting Into The Swing Of Life Again


 4:45 came WAY earlier today than I wanted it to. I think I pushed snooze three times before I jumped up. Thank goodness I wore my workout clothes to bed so I could save the few minutes of trying to figure out what to wear. When I wake up for early workouts I don’t even redo my pony from sleeping, I usually don’t change and I make everything quick.

By 5:30 I was in Stillwater for another day of boot camp. I am glad I went and didn't keep pushing snooze all morning like I wanted to at the time. I knew once I got there I would be happy I went but the part of getting out of bed and getting there was the part I hated.

After two back-to-back trips I knew it was going to be hard to get back into the swing of things. And it hit me hard when I looked in my closet yesterday to find this:

Holy anxiety. I like to think I am a very organized person. My family thinks I might have some OCD but who knows. And to add to that pile in my closet I had three laundry baskets full of dirty clothes. Gulp.

After I did all my laundry I went through my closet. I love/ hate doing this at the same time. I've spent so much on clothes and to have to get rid of them makes me sick to my stomach. But that will be another post.

Yesterday I made a healthy ice cream and it was so good! Be sure to check it out. I organized my room/closet and picked out some outfits for the week. Then I packed my lunches for Monday-Wednesday. Life will be a lot smoother when you are prepared and organized!

Tomorrow I am going to share a gluten free healthy pizza recipe! The crust is made with three ingredients (not including spices) and there is no flour! Stay tuned.

Mint Chocolate Chip Avocado Ice Cream


You are probably thinking I am crazy. But yes I made it and yes it was delicious. It tasted like mint chocolate chip ice cream- not even like it would be healthy. Which is a bonus because it is pretty healthy compared to a pint of Ben and Jerry's (don't get me wrong, I love Ben and Jerry's).

I love that I can have a guilt free treat. Just because you eat healthy does not mean you don't like to have treats. DQ, Nelsons, Cup n' Cone, Culvers - they are all still my favorites. I am trying to find new healthier dessert options so I can enjoy dessert more often.

I got this recipe from my trainer/ nutritionist. Everything in it is fairly healthy, although it may seem high in calories. Avocados are filled with good fats, vitamins and fiber. I try to eat at least half an avocado a day. Usually I eat them on my salad instead of dressing.

This recipe is a simple one that doesn't even require an ice cream maker. What is better?!



Mint chocolate chip avocado Ice cream:
1 frozen avocado (peel/slice before you put in freezer but put it back into shell)
1 serving of vanilla protein (I use Isagenix)
1/2 of lemon (use the juice)
1 tsp mint OR peppermint extract
1/4 cup unsweetened almond milk (any milk would work)
1 cup of ice
1/4 cup dark mini chocolate chips (add at the very END to avoid blending the chips)

I did two things different; first, my avocados were already in the freezer so I took them out to sit on the counter for 10 minutes before I cut them up. Another thing that I did differently was I didn’t have a lemon so I just used lemon juice from a container. Both of these we miner changes and the recipes turned out just fine.

I also LOVE whip cream. I got this whip cream from Trader Joe’s because I know it is all natural and all real (sugar, cream, vanilla).
